An exclusive gastronomic food and wine pairing dinner was hosted at The Devon Valley Hotel on May 6, 2009 for Louis Group business partners and media to showcase SylvanVale Vineyards’ finest wines coupled with the hotel’s renowned cuisine.
The SylvanVale Family Reserve 2004, matured in the finest French oak barrels for 12 months and cellared for a further 30 months before being released, complemented the main course – namely, Springbok loin wrapped in Prosciutto and chestnut puree with red cabbage, pine kernels and fondant potatoes on a merlot jus.
Among other delectable food and wine pairing combinations on the menu included the SylvanVale Shiraz 2004 and dessert of apricot and cream cheese parcels wrapped in phyllo with a blue berry confit. This Shiraz offers a complexity and balance of cherry fruit flavours, yet holds the essence of spice and vanilla notes on the follow through. The wine was rated fifteenth out of 215 wines tasted at 2006 Wine Magazine’s Tops at Spar Shiraz Challenge and won a bronze medal at the 2006 Veritas Awards.
